My issue/reason for wanting to know what happens, especially for the fins, is to see if the PLA wades mount will melt.

Yes but jamming won't stop the heat. If you don't notice it in time it might melt the extruder.

I get a white/gray power too, and use eSun PETG opaque black, and now opaque white.
Well with that hot end you should be able to up the temp even more, to see if that fixes it.

My thermistor stays within 2 degrees during printing, so I guess that's good.

Why not stick with the stock thermistor?
Consider printing in PETG. No fan, no smell, no warp, and much stronger than PLA.
My E3Dlite6 does not seem to have this occuring, so that 's good.
Reading it again, might be a temperature issue.
