The bed will stop at zmax defined in firmware, which is 300.
If you want to run down below this you can use the command "G92 Z200" (or any value below 300) to set the current position to 200. That will allow you to run down 100 mm more. But be aware that there is no endstop to prevent you from crashing into the bottom.

Alex has added the menu item under LCD/Prepare/Move Axis if you are using his firmware.

Watch out for going so low, I think @Alex9779 changed it to 295mm as the Auto Home lowers the bed by another 4mm then homes X / Y before homing Z.

I'm trying some Plum couplers and found the Auto Home the hard way.

All depends on the firmware your using, as @mike01hu said, in the prepare / move axis / then dependent on the firmware (original had only X and Y for 10 mm movements). The 1mm gives all the axis and extruder. With @Alex9779 firmware you will have Z axis in the 10mm choice and also an extra choice to send Z to max.

ok, now i understand. I am on 1.1 RC6 but it must not be alex firmware.

In the build guide. with stock firmware, how did they do this? Moving Z 1mm does not get the bed all the way to the bottom.

You gotta be patient... Set a value then the value does not change or jumps back just turn the knob and turn. Or wait until
Bed bed reached the position and then turn it again. It is possible to move the bed to Z=300...
